Tasting Notes

Nose

Dark and powerful from the first breath. Charred wood, dark dried fruit, roasted earth. Twenty-five years of wild agave, condensed.

Palate

The most assertive expression in the range. Charred agave, dark chocolate, dried black fruit, mineral tannin. Copper and clay stills working in harmony.

Finish

Very long. Dark, warming, persistent. The pine barrel fermentation leaves a faint resinous memory at the close.

How to Serve

Neat. An evening spirit for serious drinkers.

Aged beef, dark chocolate, strong blue cheese.
