Tasting Notes
Nose
Two personalities in one glass — green freshness from the angustifolia and wilder, earthier notes from the rhodacantha. Damp stone, fresh-cut grass, light smoke.
Palate
Complex and shifting. Roasted agave, tropical fruit edge, a faint bitter thread from the rhodacantha that adds intrigue and depth.
Finish
Lingering and layered. Mineral, with a late floral note that emerges slowly.
How to Serve
Neat. Give it 10 minutes to open before the first sip.

Mushroom dishes, earthy cheeses, mole negro.
