Nose
Clean roasted agave, white smoke, fresh herbs — spearmint and green apple peel. Warm and immediately welcoming.
Palate
Roasted agave hearts, a thread of citrus, wild honey, soft wood smoke. The tahona adds texture — slightly grainy and satisfying.
Finish
Medium-long. Smoke recedes into something mineral and clean. A whisper of dried herbs lingers.
How to Serve
Neat, at room temperature. A wide-mouthed clay copita opens the aromatics.

Tostadas with black bean and queso fresco. Grilled corn. Aged Manchego.
