Tasting Notes

Nose

Wilder than Espadín. Roasted peppers, green herbs, dried tropical fruit. The encino wood fermentation adds earthy depth from the opening.

Palate

Bold and textured. Roasted agave, dark chocolate edge, a savoury mineral backbone. Eleven years of maturity shows in every sip.

Finish

Dry and persistent. Smoke gives way to tannin and mineral. Stays longer than expected.

How to Serve

Neat. Temperature between 16–18°C.

Dark chocolate, aged cheddar, slow-cooked pork.
