Tasting Notes

Nose

Two stills, one agave — the copper and clay combination creates unusual complexity. Mineral, earthy, a faint resinous note from the pine fermentation barrels.

Palate

Wild and broad. Twenty years of marmorata give serious presence. Dried herbs, mineral, pine resin, roasted agave hearts. Neither fully copper nor fully clay.

Finish

Long and drying. Mineral persists with a late herbal warmth.

How to Serve

Neat. The best of the three Tepeztates for a first encounter with the species.

Grilled lamb, aged hard cheese, charcuterie.
